Ingredients
- 200 g squid
- 2 tbsp butter
- 2 medium tomato sauce
- 100 ml heavy cream
- 3 cloves garlic
- 1 tsp garam masala
Method
- Clean and slice the squid into rings, then pat dry with a paper towel to ensure proper searing.
- Melt the butter in a heavy-bottomed pan over medium heat, then add the garlic cloves and temper for about 2 minutes until fragrant.
- Add the squid rings to the pan and sear for 3 to 4 minutes, stirring occasionally, until they turn opaque and develop a light golden edge.
- Stir in the tomato sauce and garam masala, then reduce the heat to low and simmer for 8 minutes to allow the flavors to meld together.
- Pour in the heavy cream, stir well to combine, and continue simmering for a further 8 minutes until the sauce thickens and coats the squid evenly.
- Taste and adjust the seasoning with garam masala if needed, then remove from heat and allow to rest for 2 minutes before serving.
