Ingredients
- 4 pieces eggs
- 2 medium tomato
- 2 pieces pepper
- 1 tsp merguez sausage
- 3 cloves garlic
- 1 tsp cumin
Method
- Heat a wide skillet over medium heat and add the merguez sausage, cooking for about 5 minutes until it releases its fat and begins to brown.
- Add the garlic and cumin to the skillet and stir for 1 minute until fragrant, allowing the spices to bloom in the rendered fat.
- Dice the tomatoes and slice the peppers, then add them to the skillet and cook over medium heat for approximately 20 minutes, stirring occasionally, until the mixture breaks down into a thick, jammy sauce.
- Use a spoon to create 4 shallow wells in the sauce, then crack one egg into each well.
- Cover the skillet and cook over low heat for 8 to 10 minutes until the egg whites are fully set but the yolks remain slightly runny.
- Serve the chakchouka directly from the skillet while hot.
