Ingredients

  • 4 pieces eggs
  • 2 medium tomato
  • 2 pieces pepper
  • 1 tsp merguez sausage
  • 3 cloves garlic
  • 1 tsp cumin

Method

  1. Heat a wide skillet over medium heat and add the merguez sausage, cooking for about 5 minutes until it releases its fat and begins to brown.
  2. Add the garlic and cumin to the skillet and stir for 1 minute until fragrant, allowing the spices to bloom in the rendered fat.
  3. Dice the tomatoes and slice the peppers, then add them to the skillet and cook over medium heat for approximately 20 minutes, stirring occasionally, until the mixture breaks down into a thick, jammy sauce.
  4. Use a spoon to create 4 shallow wells in the sauce, then crack one egg into each well.
  5. Cover the skillet and cook over low heat for 8 to 10 minutes until the egg whites are fully set but the yolks remain slightly runny.
  6. Serve the chakchouka directly from the skillet while hot.
