- 50 g scallops
- 100 g bacon
- 100 ml heavy cream
- 2 stalks celery
- 1 small onion
- 1 tsp thyme
Method
- Dice the bacon into small pieces and cook in a large pot over medium heat for about 4 minutes until the fat renders and the bacon begins to crisp.
- Add the diced celery and sliced onion to the pot and sauté in the bacon fat for approximately 3 minutes until softened.
- Add the scallops to the pot and cook for 2 minutes, stirring gently to sear them lightly in the rendered fat.
- Sprinkle in the thyme, then pour in the heavy cream and stir to combine all ingredients.
- Reduce the heat to low and simmer the chowder for 10 minutes, stirring occasionally, until the cream thickens slightly and the flavors meld together.
