Ingredients

  • 50 g scallops
  • 100 g bacon
  • 100 ml heavy cream
  • 2 stalks celery
  • 1 small onion
  • 1 tsp thyme

Method

  1. Dice the bacon into small pieces and cook in a large pot over medium heat for about 4 minutes until the fat renders and the bacon begins to crisp.
  2. Add the diced celery and sliced onion to the pot and sauté in the bacon fat for approximately 3 minutes until softened.
  3. Add the scallops to the pot and cook for 2 minutes, stirring gently to sear them lightly in the rendered fat.
  4. Sprinkle in the thyme, then pour in the heavy cream and stir to combine all ingredients.
  5. Reduce the heat to low and simmer the chowder for 10 minutes, stirring occasionally, until the cream thickens slightly and the flavors meld together.
  6. Taste and adjust seasoning before ladling the chowder into bowls and serving hot.
