Ingredients

  • 200 g fried kale
  • 1 tsp salt
  • 1 tbsp sesame seeds

Method

  1. Wash and thoroughly dry 200 g of kale, then remove the tough central stems and tear the leaves into bite-sized pieces.
  2. Heat oil in a deep pan or wok to 180°C (350°F) in preparation for frying.
  3. Working in small batches, carefully lower the kale pieces into the hot oil and fry for 1-2 minutes until crisp and bright green, watching closely to prevent burning.
  4. Using a slotted spoon, transfer the fried kale to a plate lined with paper towels to drain excess oil.
  5. While still hot, sprinkle the kale evenly with 1 tsp of salt and 1 tbsp of sesame seeds, tossing gently to coat.
  6. Serve immediately as the crispy seaweed will soften if left to stand too long.
