Ingredients
- 50 g red lentils (small portion)
- 300 g coconut milk
- 1/2 tsp turmeric
- 3 cloves garlic
- 1 tsp ginger
Method
- Rinse the 50 g of red lentils under cold water until the water runs clear, then set aside to drain.
- In a medium saucepan over medium heat, combine the lentils with the 300 g of coconut milk, 3 cloves of garlic, and 1 tsp of ginger, stirring to incorporate evenly.
- Bring the mixture to a gentle boil, then reduce the heat to low and stir in the 1/2 tsp of turmeric to bloom the spice directly into the simmering liquid.
- Allow the dal to simmer uncovered for approximately 40 minutes, stirring occasionally, until the lentils have completely softened and begun to dissolve into a thick, creamy consistency.
- Adjust the thickness of the dal by simmering an additional 3 to 5 minutes if a denser texture is desired before serving hot across 4 portions.
