We made the traditional Turkish-Indian Fusion flavors keto-compatible. A wonderful recipe featuring Red lentils (small portion) and coconut milk.

Ingredients

  • 50 g red lentils (small portion)
  • 300 g coconut milk
  • 1/2 tsp turmeric
  • 3 cloves garlic
  • 1 tsp ginger

Method

  1. Rinse the 50 g of red lentils under cold water until the water runs clear, then set aside to drain.
  2. In a medium saucepan over medium heat, combine the lentils with the 300 g of coconut milk, 3 cloves of garlic, and 1 tsp of ginger, stirring to incorporate evenly.
  3. Bring the mixture to a gentle boil, then reduce the heat to low and stir in the 1/2 tsp of turmeric to bloom the spice directly into the simmering liquid.
  4. Allow the dal to simmer uncovered for approximately 40 minutes, stirring occasionally, until the lentils have completely softened and begun to dissolve into a thick, creamy consistency.
  5. Adjust the thickness of the dal by simmering an additional 3 to 5 minutes if a denser texture is desired before serving hot across 4 portions.
