Ingredients
- 300 g chicken
- 1 tbsp vinegar
- 1 small onion
- 3 cloves garlic
- 2 leaves bay leaf
- 1 pinch saffron
- 2 pieces pepper
Method
- Season the chicken pieces with pepper and set aside for 5 minutes while you prepare the remaining ingredients.
- Heat a heavy-bottomed pan over medium-high heat and sear the chicken pieces for about 8 minutes, turning occasionally, until golden brown on all sides.
- Add the bay leaves and saffron to the pan, stirring briefly to bloom the saffron and release its aroma into the fat, about 1 minute.
- Pour in the vinegar, reduce the heat to low, and stir to deglaze the pan, scraping up any browned bits from the bottom.
- Cover the pan and simmer the escabeche on low heat for approximately 30 minutes, until the chicken is fully cooked through and has absorbed the tangy, saffron-infused braising liquid.
- Remove the bay leaves, allow the dish to rest uncovered for 5 minutes, and serve warm or at room temperature as is traditional for escabeche.
