Ingredients

  • 300 g chicken
  • 1 tbsp vinegar
  • 1 small onion
  • 3 cloves garlic
  • 2 leaves bay leaf
  • 1 pinch saffron
  • 2 pieces pepper

Method

  1. Season the chicken pieces with pepper and set aside for 5 minutes while you prepare the remaining ingredients.
  2. Heat a heavy-bottomed pan over medium-high heat and sear the chicken pieces for about 8 minutes, turning occasionally, until golden brown on all sides.
  3. Add the bay leaves and saffron to the pan, stirring briefly to bloom the saffron and release its aroma into the fat, about 1 minute.
  4. Pour in the vinegar, reduce the heat to low, and stir to deglaze the pan, scraping up any browned bits from the bottom.
  5. Cover the pan and simmer the escabeche on low heat for approximately 30 minutes, until the chicken is fully cooked through and has absorbed the tangy, saffron-infused braising liquid.
  6. Remove the bay leaves, allow the dish to rest uncovered for 5 minutes, and serve warm or at room temperature as is traditional for escabeche.
