Ingredients
- 200 g shrimp
- 200 g zucchini noodles
- 2 medium tomato
- 3 cloves garlic
- 1 pinch saffron
- 300 g fish stock
Method
- Heat a large paella pan or wide skillet over medium-high heat and toast the saffron for 1-2 minutes until fragrant, then set aside.
- Dice the tomatoes and add them to the pan, cooking for 8-10 minutes until they break down into a sauce, stirring occasionally.
- Pour in the fish stock and bring to a simmer, then add the toasted saffron and stir to combine the flavors.
- Add the shrimp to the simmering broth and cook for 4-5 minutes until they begin to turn pink.
- Stir in the zucchini noodles and continue simmering for 6-8 minutes until the shrimp are fully cooked through and the noodles are tender.
- Taste and adjust seasoning as needed, then serve the fideos hot in bowls with the broth spooned over top.
