Ingredients

  • 200 g shrimp
  • 200 g zucchini noodles
  • 2 medium tomato
  • 3 cloves garlic
  • 1 pinch saffron
  • 300 g fish stock

Method

  1. Heat a large paella pan or wide skillet over medium-high heat and toast the saffron for 1-2 minutes until fragrant, then set aside.
  2. Dice the tomatoes and add them to the pan, cooking for 8-10 minutes until they break down into a sauce, stirring occasionally.
  3. Pour in the fish stock and bring to a simmer, then add the toasted saffron and stir to combine the flavors.
  4. Add the shrimp to the simmering broth and cook for 4-5 minutes until they begin to turn pink.
  5. Stir in the zucchini noodles and continue simmering for 6-8 minutes until the shrimp are fully cooked through and the noodles are tender.
  6. Taste and adjust seasoning as needed, then serve the fideos hot in bowls with the broth spooned over top.
