Ingredients

  • 200 g shrimp
  • 1 cup lettuce
  • 1 tbsp mint
  • 2 tbsp peanut sauce
  • 1 piece cucumber

Method

  1. Bring a small pot of water to a boil and cook the shrimp for 3 minutes until pink and opaque, then remove and let them cool completely.
  2. Once cooled, peel and halve the shrimp lengthwise and set aside.
  3. Slice the cucumber into thin matchsticks and prepare the lettuce leaves and fresh mint, arranging all components within easy reach for rolling.
  4. Lay a lettuce leaf flat, then layer cucumber matchsticks, mint, and halved shrimp along the center of the leaf.
  5. Fold the sides of the lettuce leaf inward and roll it tightly from the bottom to enclose the filling, repeating with the remaining ingredients to form all rolls.
  6. Arrange the finished rolls on a serving plate and serve immediately with peanut sauce on the side for dipping.
