Ingredients
- 200 g shrimp
- 1 cup lettuce
- 1 tbsp mint
- 2 tbsp peanut sauce
- 1 piece cucumber
Method
- Bring a small pot of water to a boil and cook the shrimp for 3 minutes until pink and opaque, then remove and let them cool completely.
- Once cooled, peel and halve the shrimp lengthwise and set aside.
- Slice the cucumber into thin matchsticks and prepare the lettuce leaves and fresh mint, arranging all components within easy reach for rolling.
- Lay a lettuce leaf flat, then layer cucumber matchsticks, mint, and halved shrimp along the center of the leaf.
- Fold the sides of the lettuce leaf inward and roll it tightly from the bottom to enclose the filling, repeating with the remaining ingredients to form all rolls.
- Arrange the finished rolls on a serving plate and serve immediately with peanut sauce on the side for dipping.
