Ingredients

  • 300 g beef
  • 1 tsp paprika
  • 1 small onion
  • 2 medium tomato
  • 2 pieces green pepper

Method

  1. Cut the beef into bite-sized cubes and set aside while you prepare the remaining ingredients.
  2. Dice the tomatoes and green pepper into small pieces, keeping them separate for staggered addition to the pot.
  3. Heat a heavy-bottomed pot over medium-high heat, add the beef cubes, and sear them for 4-5 minutes until browned on all sides.
  4. Sprinkle the paprika over the browned beef and stir vigorously for 30 seconds to bloom the spice directly in the rendered fat, a classic Hungarian technique.
  5. Add the diced tomatoes and green pepper to the pot, stir to combine, and bring the mixture to a gentle simmer.
  6. Reduce the heat to medium-low and simmer the goulash uncovered for 12-13 minutes, stirring occasionally, until the beef is tender and the sauce has thickened.
