Ingredients

  • 50 g barramundi
  • 30 g macadamia nuts
  • 2 tbsp butter
  • 1 (juiced) lemon

Method

  1. Preheat a grill or grill pan to medium-high heat, allowing it to reach temperature over approximately 10 minutes while you prepare the other ingredients.
  2. Roughly chop the macadamia nuts and toast them in 1 tablespoon of butter in a small pan over medium heat for 3 to 4 minutes until golden and fragrant, then set aside.
  3. Pat the barramundi dry, brush it with the remaining 1 tablespoon of butter, and squeeze half of the lemon juice over the fish.
  4. Place the barramundi on the grill and cook for 20 to 22 minutes per side, or until the flesh is opaque and flakes easily with a fork, for a total cook time of approximately 45 minutes.
  5. Transfer the grilled barramundi to a serving plate, spoon the toasted macadamia nuts over the top, and finish with the remaining lemon juice.
