Ingredients
- 50 g barramundi
- 30 g macadamia nuts
- 2 tbsp butter
- 1 (juiced) lemon
Method
- Preheat a grill or grill pan to medium-high heat, allowing it to reach temperature over approximately 10 minutes while you prepare the other ingredients.
- Roughly chop the macadamia nuts and toast them in 1 tablespoon of butter in a small pan over medium heat for 3 to 4 minutes until golden and fragrant, then set aside.
- Pat the barramundi dry, brush it with the remaining 1 tablespoon of butter, and squeeze half of the lemon juice over the fish.
- Place the barramundi on the grill and cook for 20 to 22 minutes per side, or until the flesh is opaque and flakes easily with a fork, for a total cook time of approximately 45 minutes.
- Transfer the grilled barramundi to a serving plate, spoon the toasted macadamia nuts over the top, and finish with the remaining lemon juice.
