Ingredients

  • 300 g chicken
  • 300 g cauliflower rice
  • 1 tsp ginger
  • 3 cloves garlic
  • 1 piece cucumber

Method

  1. Bring a pot of water to a boil, add the ginger and garlic, then submerge the chicken and poach over medium heat for 26 minutes until fully cooked through.
  2. Remove the chicken from the pot and transfer it to an ice bath for 5 minutes to firm the skin and retain moisture, reserving the poaching broth.
  3. While the chicken rests, ladle a cup of the reserved broth into a separate pan, add the cauliflower rice, and cook over medium heat for 5 to 7 minutes until tender and fragrant.
  4. Slice the cucumber into thin rounds and arrange them on a serving platter as a fresh accompaniment.
  5. Remove the chicken from the ice bath, pat dry, and chop it into serving pieces using a cleaver in the traditional Hainanese style.
  6. Plate the cauliflower rice as a base, arrange the chicken pieces on top, and serve with the sliced cucumber on the side.
  7. Spoon a small amount of the reserved ginger-garlic poaching broth over the chicken just before serving to keep it moist and aromatic.
