Ingredients
- 300 g chicken
- 300 g cauliflower rice
- 1 tsp ginger
- 3 cloves garlic
- 1 piece cucumber
Method
- Bring a pot of water to a boil, add the ginger and garlic, then submerge the chicken and poach over medium heat for 26 minutes until fully cooked through.
- Remove the chicken from the pot and transfer it to an ice bath for 5 minutes to firm the skin and retain moisture, reserving the poaching broth.
- While the chicken rests, ladle a cup of the reserved broth into a separate pan, add the cauliflower rice, and cook over medium heat for 5 to 7 minutes until tender and fragrant.
- Slice the cucumber into thin rounds and arrange them on a serving platter as a fresh accompaniment.
- Remove the chicken from the ice bath, pat dry, and chop it into serving pieces using a cleaver in the traditional Hainanese style.
- Plate the cauliflower rice as a base, arrange the chicken pieces on top, and serve with the sliced cucumber on the side.
- Spoon a small amount of the reserved ginger-garlic poaching broth over the chicken just before serving to keep it moist and aromatic.
