- 300 g lamb shoulder
- 50 g harissa
- 3 cloves garlic
- 2 tbsp olive oil
- 1 (juiced) preserved lemon
Method
- Combine the harissa, minced garlic, preserved lemon juice, and olive oil in a bowl to form a marinade, then coat the lamb shoulder thoroughly and allow it to rest for 18 minutes at room temperature.
- Heat a heavy-bottomed skillet or grill pan over high heat until smoking hot.
- Sear the marinated lamb shoulder for 4-5 minutes per side until a deep, caramelized crust forms on the exterior.
- Reduce the heat to medium and continue cooking the lamb shoulder for a further 12-14 minutes, turning occasionally, until cooked through to your desired doneness.
- Rest the lamb shoulder for 5 minutes before slicing, allowing the juices to redistribute throughout the meat.
- Serve the sliced lamb drizzled with any remaining pan juices.
