  • 2 medium tomato
  • 1 small onion
  • 1 cup arugula
  • 2 tbsp pomegranate molasses

Method

  1. Scoop the flesh from the roasted eggplant and chop it into rough, bite-sized chunks, allowing it to cool completely if still warm.
