Ingredients
- 300 g meatballs
- 2 medium tomato sauce
- 4 pieces eggs
- 1 tsp cumin
- 1 tbsp coriander
Method
- Heat a tagine or heavy-bottomed skillet over medium heat for about 2 minutes until evenly warmed.
- Add the tomato sauce to the tagine and stir in the cumin and coriander, letting the spiced sauce simmer for 5 minutes until slightly thickened.
- Nestle the meatballs into the spiced tomato sauce, cover, and cook for 8 minutes, turning them once halfway through to ensure even cooking.
- Create small wells in the sauce between the meatballs and crack the 4 eggs directly into the wells.
- Cover the tagine again and cook for a final 4 minutes until the egg whites are fully set but the yolks remain slightly runny.
- Remove from heat and serve the kefta tagine directly from the dish while hot.
