Ingredients
- 300 g lamb
- 50 g lentils (small portion)
- 2 medium tomato
- 1 small onion
- 1 tbsp coriander
- 1 (juiced) lemon
- 1/2 tsp turmeric
Method
- Heat a large pot over medium-high heat, add the lamb cut into small cubes, and sear for 3-4 minutes until browned on all sides.
- Add the chopped onion, turmeric, and coriander to the pot and stir for 2 minutes until the spices coat the lamb and become fragrant.
- Add the diced tomatoes and 50 g of lentils, stirring to combine all ingredients into a unified base.
- Pour in enough water to cover the ingredients by about 5 cm, bring to a boil, then reduce heat and simmer for 15 minutes until the lentils are tender and the lamb is cooked through.
- Squeeze the juice of one lemon into the soup, stir well, and adjust seasoning before serving hot.
