Ingredients

  • 80 g mozzarella
  • 80 g Feta cheese
  • 4 pieces eggs
  • 2 tbsp butter
  • 30 g almond flour

Method

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with 1 tablespoon of butter.
  2. Mix the almond flour with the mozzarella and Feta cheese, crumbling them together until the mixture resembles coarse breadcrumbs.
  3. Spread the cheese and almond flour mixture evenly across the prepared baking dish, pressing gently to form a base.
  4. Create 4 small wells in the cheese mixture and crack one egg into each well, then dot the surface with the remaining 1 tablespoon of butter.
  5. Bake for 22-25 minutes until the egg whites are set but the yolks remain slightly soft and the cheese is melted and golden.
  6. Remove from the oven and let rest for 2 minutes before serving warm.
