- 80 g mozzarella
- 80 g Feta cheese
- 4 pieces eggs
- 2 tbsp butter
- 30 g almond flour
Method
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with 1 tablespoon of butter.
- Mix the almond flour with the mozzarella and Feta cheese, crumbling them together until the mixture resembles coarse breadcrumbs.
- Spread the cheese and almond flour mixture evenly across the prepared baking dish, pressing gently to form a base.
- Create 4 small wells in the cheese mixture and crack one egg into each well, then dot the surface with the remaining 1 tablespoon of butter.
- Bake for 22-25 minutes until the egg whites are set but the yolks remain slightly soft and the cheese is melted and golden.
- Remove from the oven and let rest for 2 minutes before serving warm.
