Ingredients

  • 300 g lamb shank
  • 2 tbsp red wine
  • 150 g mushrooms
  • 1 small onion
  • 100 g bacon
  • 1 tsp thyme

Method

  1. Pat the lamb shank dry and season it generously with thyme, pressing the herb into the meat to help it adhere.
  2. In a heavy-bottomed Dutch oven or braising pot over medium-high heat, sear the lamb shank for approximately 4-5 minutes per side until a deep, golden-brown crust forms.
  3. Add the bacon to the pot and render it for 3-4 minutes until the fat releases and the pieces begin to crisp at the edges.
  4. Add the mushrooms and onion to the pot, stirring them into the rendered bacon fat and allowing them to soften for 5 minutes over medium heat.
  5. Pour in the red wine, scraping up any caramelized fond from the bottom of the pot to deglaze and build the braising liquid.
  6. Reduce the heat to low, cover the pot tightly, and braise the lamb shank for approximately 25-30 minutes until the meat is tender and pulls easily from the bone.
  7. Uncover the pot for the final 3 minutes of cooking to allow the braising liquid to reduce slightly into a rich, glossy sauce before serving.
