Ingredients

  • 50 g koyun incik
  • 1 tsp ginger
  • 1 tsp garam masala
  • 2 pieces pepper
  • 2 tbsp bone broth
  • 3 cloves garlic

Method

  1. In a heavy-bottomed pot over medium-high heat, sear the koyun incik pieces for 3-4 minutes until browned on all sides to develop a deep base flavor.
  2. Add the garlic, ginger, pepper, and garam masala to the pot and stir continuously for 2 minutes to bloom the spices in the rendered fat, using the traditional Pakistani tempering technique.
  3. Pour in the bone broth, scraping up any browned bits from the bottom of the pot, then reduce the heat to low.
  4. Cover the pot and allow the nihari to simmer gently for 20 minutes, letting the koyun incik become tender and the broth reduce into a rich, aromatic gravy.
  5. Taste and adjust seasoning with additional pepper or garam masala as needed before serving hot.
