Ingredients
- 50 g koyun incik
- 1 tsp ginger
- 1 tsp garam masala
- 2 pieces pepper
- 2 tbsp bone broth
- 3 cloves garlic
Method
- In a heavy-bottomed pot over medium-high heat, sear the koyun incik pieces for 3-4 minutes until browned on all sides to develop a deep base flavor.
- Add the garlic, ginger, pepper, and garam masala to the pot and stir continuously for 2 minutes to bloom the spices in the rendered fat, using the traditional Pakistani tempering technique.
- Pour in the bone broth, scraping up any browned bits from the bottom of the pot, then reduce the heat to low.
- Cover the pot and allow the nihari to simmer gently for 20 minutes, letting the koyun incik become tender and the broth reduce into a rich, aromatic gravy.
- Taste and adjust seasoning with additional pepper or garam masala as needed before serving hot.
