Ingredients

  • 300 g beef trotters
  • 2 tbsp palm oil
  • 50 g utazi leaves
  • 2 pieces pepper
  • 1 small onion

Method

  1. Place the beef trotters in a pot, cover with water, and boil over medium-high heat for approximately 22 minutes until the meat is tender and beginning to pull from the bone.
  2. While the trotters cook, blend the pepper into a coarse paste and set aside.
  3. Drain the cooked beef trotters and transfer them to a heavy-bottomed pot or earthenware pot, then add the palm oil and blended pepper, stirring to coat the meat evenly.
  4. Cook the trotters with the palm oil and pepper mixture over medium heat for 12 minutes, stirring frequently, until the sauce thickens and the oil fully incorporates into the spiced coating.
  5. Roughly chop the utazi leaves and fold them through the pot during the final 4 minutes of cooking, allowing their characteristic bitterness to balance the richness of the palm oil.
  6. Remove the pot from the heat and allow the Nkwobi to rest for 2 minutes before serving, so the flavors meld and the sauce clings to the trotters.
