Ingredients

  • 300 g beef
  • 1 tsp paprika
  • 1 small onion
  • 2 medium tomato
  • 2 pieces green pepper

Method

  1. Cut the beef into bite-sized cubes and season generously with paprika, ensuring each piece is evenly coated.
  2. Dice the onion and green peppers, and roughly chop the tomatoes into chunks, keeping all vegetables ready for the pot.
  3. Heat a heavy-bottomed pot over medium-high heat and sear the beef cubes for 3-4 minutes until browned on all sides, building a deep fond on the base of the pot.
  4. Add the diced onion and green peppers to the pot and cook for 3 minutes, stirring frequently until they begin to soften.
  5. Stir in the chopped tomatoes and any remaining paprika, scraping up the browned bits from the bottom of the pot to incorporate all the flavors.
  6. Reduce the heat to low, cover the pot, and simmer the stew for 18-20 minutes until the beef is tender and the sauce has thickened to a rich, glossy consistency.
