- 1 tsp paprika
- 1 small onion
- 2 medium tomato
- 2 pieces green pepper
Method
- Cut the beef into bite-sized cubes and season generously with paprika, ensuring each piece is evenly coated.
- Dice the onion and green peppers, and roughly chop the tomatoes into chunks, keeping all vegetables ready for the pot.
- Heat a heavy-bottomed pot over medium-high heat and sear the beef cubes for 3-4 minutes until browned on all sides, building a deep fond on the base of the pot.
- Add the diced onion and green peppers to the pot and cook for 3 minutes, stirring frequently until they begin to soften.
- Stir in the chopped tomatoes and any remaining paprika, scraping up the browned bits from the bottom of the pot to incorporate all the flavors.
- Reduce the heat to low, cover the pot, and simmer the stew for 18-20 minutes until the beef is tender and the sauce has thickened to a rich, glossy consistency.
