Ingredients

  • 200 g shrimp
  • 300 g coconut milk
  • 1/2 tsp turmeric
  • 2 pieces green pepper
  • 1 tsp curry leaves

Method

  1. Heat a wide pan over medium heat and add the curry leaves, allowing them to splutter and release their aroma for about 1 minute.
  2. Add the green pepper to the pan and sauté for 3 minutes until slightly softened.
  3. Stir in the turmeric and toast it with the green pepper for 30 seconds to bloom the spice.
  4. Pour in the coconut milk, stir to combine, and bring the mixture to a gentle simmer over low heat for 8 minutes until the sauce thickens slightly.
  5. Add the shrimp to the simmering coconut milk sauce and cook for 8 to 10 minutes, turning once, until the shrimp are opaque and cooked through.
  6. Taste the moilee and adjust seasoning, then remove from heat and allow to rest for 2 minutes before serving.
