Ingredients
- 200 g shrimp
- 300 g coconut milk
- 1/2 tsp turmeric
- 2 pieces green pepper
- 1 tsp curry leaves
Method
- Heat a wide pan over medium heat and add the curry leaves, allowing them to splutter and release their aroma for about 1 minute.
- Add the green pepper to the pan and sauté for 3 minutes until slightly softened.
- Stir in the turmeric and toast it with the green pepper for 30 seconds to bloom the spice.
- Pour in the coconut milk, stir to combine, and bring the mixture to a gentle simmer over low heat for 8 minutes until the sauce thickens slightly.
- Add the shrimp to the simmering coconut milk sauce and cook for 8 to 10 minutes, turning once, until the shrimp are opaque and cooked through.
- Taste the moilee and adjust seasoning, then remove from heat and allow to rest for 2 minutes before serving.
