Ingredients

  • 300 g duck
  • 50 g hoisin (keto)
  • 1 piece cucumber
  • 1 small scallions
  • 1 cup lettuce

Method

  1. Place the duck in a pot, cover with water, and simmer over medium heat for 20 minutes until the meat is fully cooked and tender enough to shred.
  2. Remove the duck from the pot, allow it to cool slightly, then use two forks to pull the meat apart into thin, even shreds.
  3. Heat a pan over medium-high heat, add the shredded duck along with the keto hoisin sauce, and toss continuously for 4 to 6 minutes until the duck is well coated and the sauce caramelizes slightly.
  4. While the duck finishes cooking, slice the cucumber into thin matchsticks and finely slice the scallions on a diagonal to prepare the fresh toppings.
  5. Separate the lettuce into individual cup-shaped leaves and arrange them on a serving platter, ready to be filled.
  6. Spoon a generous portion of the hoisin-glazed pulled duck into each lettuce cup, then top with cucumber matchsticks and sliced scallions before serving immediately.
