Ingredients
- 300 g duck
- 50 g hoisin (keto)
- 1 piece cucumber
- 1 small scallions
- 1 cup lettuce
Method
- Place the duck in a pot, cover with water, and simmer over medium heat for 20 minutes until the meat is fully cooked and tender enough to shred.
- Remove the duck from the pot, allow it to cool slightly, then use two forks to pull the meat apart into thin, even shreds.
- Heat a pan over medium-high heat, add the shredded duck along with the keto hoisin sauce, and toss continuously for 4 to 6 minutes until the duck is well coated and the sauce caramelizes slightly.
- While the duck finishes cooking, slice the cucumber into thin matchsticks and finely slice the scallions on a diagonal to prepare the fresh toppings.
- Separate the lettuce into individual cup-shaped leaves and arrange them on a serving platter, ready to be filled.
