Ingredients

  • 300 g beef steak rolls
  • 2 tbsp mustard
  • 50 g cornichons
  • 100 g bacon
  • 1 small onion
  • 2 tbsp bone broth

Method

  1. Lay the beef steak rolls flat on a clean work surface and spread 1 tablespoon of mustard evenly over each piece.
  2. Place the bacon strips, cornichons, and onion along the center of each beef steak roll, then roll them up tightly and secure with toothpicks or kitchen twine.
  3. Heat a heavy skillet over medium-high heat and sear the rouladen on all sides for approximately 4-5 minutes until a deep brown crust forms.
  4. Deglaze the pan with the bone broth, scraping up any browned bits from the bottom, then reduce the heat to medium-low.
  5. Cover the skillet and braise the rouladen for 10-11 minutes, turning once halfway through, until the beef is cooked through and tender.
  6. Remove the toothpicks or twine, spoon the pan juices over the rouladen, and serve immediately.
