- 60 g yogurt
- 1 tsp tandoori spice
- 1 (juiced) lemon
- 3 cloves garlic
- 1 tsp ginger
Method
- In a bowl, combine the yogurt, tandoori spice, lemon juice, garlic, and ginger to form a smooth marinade.
- Coat the cod thoroughly in the marinade, ensuring every surface is well covered, then refrigerate for at least 15 minutes of the prep time.
- Preheat your oven to 200°C (400°F) and line a baking tray with foil or a wire rack to allow heat to circulate around the fish.
- Place the marinated cod onto the prepared tray and roast in the oven for 40 to 45 minutes, basting once halfway through with any remaining marinade.
- In the final 5 minutes, switch the oven to the grill setting to char the surface of the cod, replicating the characteristic tandoor finish.
- Remove the fish from the oven and allow it to rest for 2 minutes before serving with a squeeze of any remaining lemon juice.
