Ingredients

  • 50 g quail
  • 300 g duck
  • 300 g stuffed chicken
  • 1 tsp sage
  • 3 cloves garlic
  • 100 g bacon

Method

  1. Preheat the oven to 375°F (190°C) and lay the bacon strips flat on a clean work surface to use as an outer wrap for the turducken assembly.
  2. Season the duck and quail with sage, ensuring the herb is distributed evenly over all surfaces of both birds.
  3. Layer the stuffed chicken inside the duck cavity, then nestle the quail on top of the stuffed chicken to create the classic turducken layering effect.
  4. Rub the minced garlic over the outer surface of the duck before wrapping the entire assembled bird tightly with the bacon strips to keep the layers secure during roasting.
  5. Place the bacon-wrapped turducken seam-side down in a roasting pan and roast in the preheated oven for 40 minutes, until the bacon is crisp and the internal temperature of the duck reaches 165°F (74°C).
  6. Remove the turducken from the oven and allow it to rest for 5 minutes before slicing through all layers to serve.
