Ingredients
- 50 g quail
- 300 g duck
- 300 g stuffed chicken
- 1 tsp sage
- 3 cloves garlic
- 100 g bacon
Method
- Preheat the oven to 375°F (190°C) and lay the bacon strips flat on a clean work surface to use as an outer wrap for the turducken assembly.
- Season the duck and quail with sage, ensuring the herb is distributed evenly over all surfaces of both birds.
- Layer the stuffed chicken inside the duck cavity, then nestle the quail on top of the stuffed chicken to create the classic turducken layering effect.
- Rub the minced garlic over the outer surface of the duck before wrapping the entire assembled bird tightly with the bacon strips to keep the layers secure during roasting.
- Place the bacon-wrapped turducken seam-side down in a roasting pan and roast in the preheated oven for 40 minutes, until the bacon is crisp and the internal temperature of the duck reaches 165°F (74°C).
- Remove the turducken from the oven and allow it to rest for 5 minutes before slicing through all layers to serve.
