  • 500 g Ground chicken
  • 1 piece(s) Zucchini, shredded
  • 1 can (400ml) Coconut milk
  • 2 tbsp Curry paste
  • 1 piece(s) Egg(s)
  • 1/4 cup Almond flour
  • to taste Salt and pepper

Method

  1. Squeeze excess moisture from shredded zucchini.
  2. Mix ground chicken, zucchini, egg and almond flour to form meatballs.
  3. Brown meatballs in a skillet.
  4. In a separate pan, bring curry paste and coconut milk to a simmer.
  5. Add meatballs to the sauce and simmer on low for 10 min.
