- 500 g Ground chicken
- 1 piece(s) Zucchini, shredded
- 1 can (400ml) Coconut milk
- 2 tbsp Curry paste
- 1 piece(s) Egg(s)
- 1/4 cup Almond flour

Method
- Squeeze excess moisture from shredded zucchini.
- Mix ground chicken, zucchini, egg and almond flour to form meatballs.
- Brown meatballs in a skillet.
- In a separate pan, bring curry paste and coconut milk to a simmer.
- Add meatballs to the sauce and simmer on low for 10 min.
