- 1/2 cup Monk fruit sweetener (granular)
- 1 Large egg
Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
- Stir peanut butter, monk fruit, and egg until a thick uniform dough forms.
- Roll into 8 balls and space evenly on the sheet.
- Press a fork twice in a crosshatch pattern to flatten each cookie.
