Ingredients
- 1 medium (450g) Eggplant, cut into 1/2-inch sticks
- 2 Large eggs, beaten
- 3/4 cup (75g) Almond flour
- 1/2 cup (50g) Parmesan, finely grated
- 1 tsp Italian seasoning
- 1/2 tsp Garlic powder
- 1/2 tsp Salt
- as needed Olive oil spray
Method
- Salt the eggplant sticks and let them sit on paper towels for 10 minutes; pat dry.
- Whisk eggs in one bowl. In another, mix almond flour, parmesan, Italian seasoning, garlic powder, and salt.
- Dip each eggplant stick in egg, then dredge in the almond-parmesan mix to coat.
- Arrange in a single layer in the air fryer basket; spray lightly with olive oil.
- Air fry at 375°F (190°C) for 12-15 minutes, flipping halfway, until golden and crisp.
- Serve hot with marinara or garlic aioli.
