Ingredients

  • 1 medium (450g) Eggplant, cut into 1/2-inch sticks
  • 2 Large eggs, beaten
  • 3/4 cup (75g) Almond flour
  • 1/2 cup (50g) Parmesan, finely grated
  • 1 tsp Italian seasoning
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt
  • as needed Olive oil spray

Method

  1. Salt the eggplant sticks and let them sit on paper towels for 10 minutes; pat dry.
  2. Whisk eggs in one bowl. In another, mix almond flour, parmesan, Italian seasoning, garlic powder, and salt.
  3. Dip each eggplant stick in egg, then dredge in the almond-parmesan mix to coat.
  4. Arrange in a single layer in the air fryer basket; spray lightly with olive oil.
  5. Air fry at 375°F (190°C) for 12-15 minutes, flipping halfway, until golden and crisp.
  6. Serve hot with marinara or garlic aioli.
