- 80 g Parmesan
- 50 g capers
- 1 (juiced) lemon
- 2 tbsp olive oil
Method
- Wrap the beef tenderloin tightly in plastic wrap and place it in the freezer for 5 minutes to firm it up slightly, making it easier to slice paper-thin.
- Using a very sharp knife or mandoline, slice the chilled beef tenderloin into the thinnest possible rounds and arrange them in a single, overlapping layer across a large serving plate.
- Drizzle the olive oil evenly over the beef slices, then squeeze the fresh lemon juice over the entire surface of the carpaccio.
- Scatter the capers uniformly over the dressed beef, then use a vegetable peeler or fine grater to shave the Parmesan generously across the plate.
- Top the carpaccio with the fresh arugula, season lightly with a pinch of salt and cracked black pepper if desired, and serve immediately at room temperature.
