  • 150 g beef tenderloin
  • 1 cup arugula
  • 80 g Parmesan
  • 50 g capers
  • 1 (juiced) lemon
  • 2 tbsp olive oil

Method

  1. Wrap the beef tenderloin tightly in plastic wrap and place it in the freezer for 5 minutes to firm it up slightly, making it easier to slice paper-thin.
  2. Using a very sharp knife or mandoline, slice the chilled beef tenderloin into the thinnest possible rounds and arrange them in a single, overlapping layer across a large serving plate.
  3. Drizzle the olive oil evenly over the beef slices, then squeeze the fresh lemon juice over the entire surface of the carpaccio.
  4. Scatter the capers uniformly over the dressed beef, then use a vegetable peeler or fine grater to shave the Parmesan generously across the plate.
  5. Top the carpaccio with the fresh arugula, season lightly with a pinch of salt and cracked black pepper if desired, and serve immediately at room temperature.
