Ingredients

  • 4 (about 1.5 lbs / 680g) Chicken breasts, pounded thin
  • 1 cup (100g) Almond flour
  • 1/2 cup Parmesan, finely grated
  • 1 tsp Italian seasoning
  • 1 tsp Garlic powder
  • 2 large Eggs, beaten
  • 1 cup Marinara sauce, no-sugar-added
  • 1 cup (115g) Mozzarella, shredded
  • few leaves Fresh basil, for garnish
  • to taste Salt and pepper
  • as needed Olive oil spray

Method

  1. Pat chicken dry; season both sides with salt and pepper.
  2. In a shallow dish, mix almond flour, parmesan, Italian seasoning, and garlic powder.
  3. Dip each chicken breast in beaten egg, then dredge in the almond-parmesan mix, pressing to adhere.
  4. Preheat air fryer to 380°F (193°C). Lightly spray basket with olive oil.
  5. Air fry chicken 6-7 minutes per side until golden and 165°F (74°C) internal.
  6. Spoon 1/4 cup marinara over each cutlet, then top with mozzarella.
  7. Air fry 2-3 more minutes until cheese is melted and bubbly.
  8. Garnish with fresh basil and serve.
