Ingredients
- 4 (about 1.5 lbs / 680g) Chicken breasts, pounded thin
- 1 cup (100g) Almond flour
- 1/2 cup Parmesan, finely grated
- 1 tsp Italian seasoning
- 1 tsp Garlic powder
- 2 large Eggs, beaten
- 1 cup Marinara sauce, no-sugar-added
- 1 cup (115g) Mozzarella, shredded
- few leaves Fresh basil, for garnish
- to taste Salt and pepper
- as needed Olive oil spray
Method
- Pat chicken dry; season both sides with salt and pepper.
- In a shallow dish, mix almond flour, parmesan, Italian seasoning, and garlic powder.
- Dip each chicken breast in beaten egg, then dredge in the almond-parmesan mix, pressing to adhere.
- Preheat air fryer to 380°F (193°C). Lightly spray basket with olive oil.
- Air fry chicken 6-7 minutes per side until golden and 165°F (74°C) internal.
- Spoon 1/4 cup marinara over each cutlet, then top with mozzarella.
- Air fry 2-3 more minutes until cheese is melted and bubbly.
- Garnish with fresh basil and serve.
