  • 1/2 cup (50g) Almond flour
  • 1 Large egg
  • 1/4 cup (28g) Mozzarella, shredded (for dough)
  • 1/2 tsp Baking powder
  • 2 (56g) Sharp cheddar slices
  • 1 tbsp Butter (for grilling)
  • pinch Salt

Method

  1. Mix almond flour, baking powder, salt, mozzarella, and egg into a dough.
  2. Press into 2 thin rectangular slices on parchment; microwave 60-90 seconds until set, or bake at 375°F for 8 minutes.
  3. Heat butter in a skillet over medium heat.
  4. Sandwich cheddar between the two bread slices; grill 2-3 minutes per side until golden and cheese is melty.
  5. Cut diagonally and serve immediately.
