- 1 Large egg
- 1/4 cup (28g) Mozzarella, shredded (for dough)
- 1/2 tsp Baking powder
- 2 (56g) Sharp cheddar slices
- 1 tbsp Butter (for grilling)

Method
- Mix almond flour, baking powder, salt, mozzarella, and egg into a dough.
- Press into 2 thin rectangular slices on parchment; microwave 60-90 seconds until set, or bake at 375°F for 8 minutes.
- Heat butter in a skillet over medium heat.
- Sandwich cheddar between the two bread slices; grill 2-3 minutes per side until golden and cheese is melty.
- Cut diagonally and serve immediately.
