Ingredients
- 12 oz (340g) Andouille sausage, sliced
- 2 medium Bell peppers (mixed colors), sliced
- 1/2 medium Yellow onion, sliced
- 1 tbsp Olive oil
- 2 cloves Garlic, minced
- 1 tsp Cajun seasoning
- 1/4 cup Chicken broth
- to taste Hot sauce (optional)
Method
- Heat olive oil in a large skillet over medium-high. Sear andouille slices until browned, 3-4 minutes; remove.
- Add peppers and onion; sauté 6-7 minutes until lightly charred and tender.
- Stir in garlic and Cajun seasoning; cook 1 minute.
- Return sausage to the pan; add broth and simmer 2 minutes to glaze.
- Finish with hot sauce to taste.
