Ingredients

  • 12 oz (340g) Andouille sausage, sliced
  • 2 medium Bell peppers (mixed colors), sliced
  • 1/2 medium Yellow onion, sliced
  • 1 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tsp Cajun seasoning
  • 1/4 cup Chicken broth
  • to taste Hot sauce (optional)

Method

  1. Heat olive oil in a large skillet over medium-high. Sear andouille slices until browned, 3-4 minutes; remove.
  2. Add peppers and onion; sauté 6-7 minutes until lightly charred and tender.
  3. Stir in garlic and Cajun seasoning; cook 1 minute.
  4. Return sausage to the pan; add broth and simmer 2 minutes to glaze.
  5. Finish with hot sauce to taste.
