Ingredients

  • 1.5 lbs (680g) Chicken thighs, sliced
  • 2 cups Broccoli florets
  • 1 medium Bell pepper, sliced
  • 3 tbsp Soy sauce (or coconut aminos)
  • 2 tbsp Sesame oil
  • 1 tbsp Fresh ginger, grated
  • 3 cloves Garlic, minced
  • 1 tbsp Rice vinegar
  • 1 tbsp Sesame seeds

Method

  1. Heat sesame oil in a wok or large skillet over high heat.
  2. Stir-fry chicken 4-5 minutes until golden. Remove and set aside.
  3. Add broccoli and bell pepper, stir-fry 3 minutes until crisp-tender.
  4. Return chicken. Add soy sauce, ginger, garlic, and rice vinegar. Toss 1 minute.
  5. Sprinkle with sesame seeds and serve.
