Ingredients
- 4 large Hard-boiled eggs, chopped
- 1 medium Avocado, mashed
- 2 tbsp Mayonnaise
- 1 tsp Dijon mustard
- 1 tsp Lemon juice
- 2 tbsp Green onion, thinly sliced
- 8 Iceberg or romaine lettuce, large leaves
- to taste Salt and black pepper
Method
- Mash avocado with mayo, Dijon, and lemon juice until creamy.
- Fold in chopped eggs and green onion; season with salt and pepper.
- Stack two lettuce leaves per sandwich as the base; spoon the salad on top.
