Ingredients

  • 4 large Hard-boiled eggs, chopped
  • 1 medium Avocado, mashed
  • 2 tbsp Mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Lemon juice
  • 2 tbsp Green onion, thinly sliced
  • 8 Iceberg or romaine lettuce, large leaves
  • to taste Salt and black pepper

Method

  1. Mash avocado with mayo, Dijon, and lemon juice until creamy.
  2. Fold in chopped eggs and green onion; season with salt and pepper.
  3. Stack two lettuce leaves per sandwich as the base; spoon the salad on top.
  4. Cap with two more lettuce leaves to make a hand-held sandwich. Wrap in parchment if eating later.
