Ingredients
- 2 lbs (900g) Collard greens, stems removed and sliced
- 8 oz (225g) Bacon, chopped
- 1/2 medium Yellow onion, diced
- 4 cloves Garlic, minced
- 4 cups Chicken broth
- 2 tbsp Apple cider vinegar
- 1/2 tsp Red pepper flakes
- to taste Salt and pepper
Method
- Cook bacon in a Dutch oven over medium until crisp, 6-8 minutes. Remove half; leave the rest with the drippings.
- Add onion to the pot; sauté 4 minutes. Add garlic and red pepper flakes; cook 30 seconds.
- Add collards in handfuls, stirring to wilt between additions.
- Pour in broth and vinegar. Cover; simmer 45-60 minutes until very tender.
- Season with salt and pepper. Top with the reserved crispy bacon.
