Ingredients

  • 2 lbs (900g) Collard greens, stems removed and sliced
  • 8 oz (225g) Bacon, chopped
  • 1/2 medium Yellow onion, diced
  • 4 cloves Garlic, minced
  • 4 cups Chicken broth
  • 2 tbsp Apple cider vinegar
  • 1/2 tsp Red pepper flakes
  • to taste Salt and pepper

Method

  1. Cook bacon in a Dutch oven over medium until crisp, 6-8 minutes. Remove half; leave the rest with the drippings.
  2. Add onion to the pot; sauté 4 minutes. Add garlic and red pepper flakes; cook 30 seconds.
  3. Add collards in handfuls, stirring to wilt between additions.
  4. Pour in broth and vinegar. Cover; simmer 45-60 minutes until very tender.
  5. Season with salt and pepper. Top with the reserved crispy bacon.
