- 2 Cloud bread rounds
- 3 Hard-boiled eggs, chopped
- 2 Bacon strips, crisp and crumbled
- 2 tbsp Mayonnaise
- 1/2 tsp Dijon mustard
- 1 tsp Fresh chives, chopped
- 1 tbsp Celery, finely diced
- to taste Salt and black pepper
Method
- Mix chopped eggs with mayo, dijon, chives, celery, and crumbled bacon. Season with salt and pepper.
- Spread egg salad on one cloud bread round; top with the second.
