Ingredients

  • 1.5 lbs (680g) Boneless chicken thighs, cut into 1-inch pieces
  • 1/2 cup (75g) Fresh pineapple, cut into small chunks
  • 12 Bacon strips, halved
  • 2 tbsp Coconut aminos
  • 1 tbsp Erythritol brown sugar substitute
  • 1/2 tsp Garlic powder
  • 1/2 tsp Black pepper

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and a wire rack.
  2. Whisk coconut aminos, erythritol brown sugar, garlic powder, and pepper. Toss with chicken pieces.
  3. Wrap each chicken piece (with one small pineapple chunk on top) in a half-strip of bacon; secure with a toothpick.
  4. Arrange on the rack and bake 22-25 minutes until bacon is crisp and chicken reaches 165°F internal.
  5. Brush with any remaining glaze in the last 5 minutes for extra shine.
