Ingredients
- 1.5 lbs (680g) Ground beef (80/20)
- 6 strips Bacon, chopped
- 1 cup (110g) Sharp cheddar, shredded
- 6 cups (300g) Romaine lettuce, chopped
- 1 small Roma tomato, diced
- 1/4 cup (40g) Red onion, finely diced
- 1/2 cup (60g) Dill pickles, sliced
- 1/4 cup Sugar-free BBQ sauce (e.g., G Hughes)
- 2 tbsp Ranch or mayo (optional, to drizzle)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- to taste Salt and black pepper
Method
- Cook chopped bacon in a large skillet over medium heat until crisp. Transfer to a paper towel; reserve 1 tbsp drippings in the pan.
- Add ground beef to the same skillet. Season with smoked paprika, garlic powder, salt, and pepper.
- Break up the beef and cook 6-8 minutes until browned and cooked through. Drain excess fat if desired.
- Off heat, stir in 2 tbsp of the BBQ sauce to glaze the beef.
- Divide chopped romaine across 4 bowls. Top with the BBQ beef, crispy bacon, shredded cheddar, tomato, red onion, and pickles.
- Drizzle with remaining BBQ sauce and a little ranch or mayo if using. Serve immediately.
