Ingredients
- 4 Large eggs, separated
- 4 oz (113g) Cream cheese, softened
- 1/8 tsp Cream of tartar
- 1 tbsp Smoked paprika
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 1/4 tsp Salt
- 10 oz (283g) Roasted turkey breast, sliced
- 5 (3.75 oz / 106g total) Sharp cheddar slices
- 5 leaves (75g total) Green leaf lettuce
- 5 (20g each) Tomato slices
- 5 slices (9g each) Red onion, thinly sliced
Method
- Heat oven to 300°F (150°C). Line two sheet pans with parchment.
- Whip egg whites with cream of tartar to stiff peaks.
- In a separate bowl, whisk yolks with softened cream cheese, salt, smoked paprika, garlic powder, and onion powder until smooth.
- Gently fold the yolk mixture into the whites in three additions, keeping as much volume as possible.
- Scoop 1/4-cup mounds onto the parchment, spreading into 3-inch rounds with about 1 inch between. You'll have 10 buns.
- Bake 25-30 minutes until tops are nicely browned and set. Cool fully on the sheet before assembling.
- For each sandwich, layer one bun with 1 lettuce leaf, 1 tomato slice, 1 red onion slice, 2 oz turkey, and 1 cheddar slice; top with a second bun.
- Serve immediately — cloud bread softens with moisture, so assemble just before eating. Store extra buns separated by parchment in the fridge or freezer.
