Ingredients

  • 2 Low-carb tortillas (street taco size)
  • 8 oz (227g) Ground beef (80/20)
  • 2 Cheddar cheese slices
  • 1 cup Shredded iceberg lettuce
  • 4 Dill pickle chips
  • 2 tbsp Mayonnaise
  • 1 tsp Yellow mustard
  • 1 tsp Pickle juice
  • 1/2 tsp Monk fruit sweetener
  • 1/4 tsp Smoked paprika
  • to taste Salt and black pepper

Method

  1. Whisk mayo, mustard, pickle juice, monk fruit, and paprika to make the Big Mac sauce.
  2. Divide ground beef in half. Press one ball thinly onto each tortilla so the meat covers the surface.
  3. Heat a skillet over medium-high. Place tacos meat-side down and press hard with a spatula. Cook 3-4 minutes until deeply browned.
  4. Flip, top with cheddar, and cook 1 minute until melted.
  5. Pile lettuce, pickles, and a generous drizzle of sauce on top. Fold and serve immediately.
