Ingredients
- 2 Low-carb tortillas (street taco size)
- 8 oz (227g) Ground beef (80/20)
- 2 Cheddar cheese slices
- 1 cup Shredded iceberg lettuce
- 4 Dill pickle chips
- 2 tbsp Mayonnaise
- 1 tsp Yellow mustard
- 1 tsp Pickle juice
- 1/2 tsp Monk fruit sweetener
- 1/4 tsp Smoked paprika
- to taste Salt and black pepper
Method
- Whisk mayo, mustard, pickle juice, monk fruit, and paprika to make the Big Mac sauce.
- Divide ground beef in half. Press one ball thinly onto each tortilla so the meat covers the surface.
- Heat a skillet over medium-high. Place tacos meat-side down and press hard with a spatula. Cook 3-4 minutes until deeply browned.
- Flip, top with cheddar, and cook 1 minute until melted.
- Pile lettuce, pickles, and a generous drizzle of sauce on top. Fold and serve immediately.
