Ingredients

  • 2 (6 oz / 170g each) Catfish fillets
  • 3 tbsp Butter, melted
  • 1 tbsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Dried thyme
  • 1/2 tsp Dried oregano
  • 1/2 tsp Cayenne
  • 1/2 tsp Black pepper
  • 1 tsp Salt
  • 2 Lemon wedges (to serve)

Method

  1. Mix all spices in a small bowl to make the blackening rub.
  2. Pat fillets dry, brush both sides with melted butter, then press into the spice mix to coat evenly.
  3. Heat a dry cast-iron skillet over high until smoking hot.
  4. Lay fillets in the skillet (away from you — it will smoke). Cook 3-4 minutes per side until a black crust forms and fish flakes.
  5. Serve with lemon wedges and a drizzle of any remaining melted butter.
