Ingredients
- 2 (6 oz / 170g each) Catfish fillets
- 3 tbsp Butter, melted
- 1 tbsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Dried thyme
- 1/2 tsp Dried oregano
- 1/2 tsp Cayenne
- 1/2 tsp Black pepper
- 1 tsp Salt
- 2 Lemon wedges (to serve)
Method
- Mix all spices in a small bowl to make the blackening rub.
- Pat fillets dry, brush both sides with melted butter, then press into the spice mix to coat evenly.
- Heat a dry cast-iron skillet over high until smoking hot.
- Lay fillets in the skillet (away from you — it will smoke). Cook 3-4 minutes per side until a black crust forms and fish flakes.
- Serve with lemon wedges and a drizzle of any remaining melted butter.
