Ingredients
- 1/2 cup (75g) Fresh blueberries
- 1/2 cup Fresh lemon juice
- 3 cups Cold water
- 1/4 cup Monk fruit sweetener
- 2 cups Ice
- 8 Fresh mint leaves
Method
- Simmer blueberries with 1/2 cup water in a small saucepan 5 minutes, mashing as they soften.
- Strain through a fine sieve into a pitcher, pressing to extract the juice. Discard solids.
- Stir in lemon juice, monk fruit, and the remaining 2 1/2 cups cold water.
- Chill 15 minutes or pour over ice.
- Garnish each glass with mint leaves and serve immediately.
