Ingredients

  • 1/2 cup (75g) Fresh blueberries
  • 1/2 cup Fresh lemon juice
  • 3 cups Cold water
  • 1/4 cup Monk fruit sweetener
  • 2 cups Ice
  • 8 Fresh mint leaves

Method

  1. Simmer blueberries with 1/2 cup water in a small saucepan 5 minutes, mashing as they soften.
  2. Strain through a fine sieve into a pitcher, pressing to extract the juice. Discard solids.
  3. Stir in lemon juice, monk fruit, and the remaining 2 1/2 cups cold water.
  4. Chill 15 minutes or pour over ice.
  5. Garnish each glass with mint leaves and serve immediately.
