Ingredients

  • 2 lbs (900g) Picanha (top sirloin cap)
  • 2 tbsp Coarse sea salt
  • to taste Black pepper

Method

  1. Score the fat cap in a crosshatch pattern, about 1/4 inch deep.
  2. Season generously with coarse salt and pepper on all sides.
  3. Sear fat-cap side down in a hot cast iron skillet for 5 minutes.
  4. Transfer to a 400°F (200°C) oven, roast 18-22 minutes for medium-rare.
  5. Rest 10 minutes before slicing against the grain. Serve with chimichurri.
