Ingredients
- 2 lbs (900g) Picanha (top sirloin cap)
- 2 tbsp Coarse sea salt
- to taste Black pepper
Method
- Score the fat cap in a crosshatch pattern, about 1/4 inch deep.
- Season generously with coarse salt and pepper on all sides.
- Sear fat-cap side down in a hot cast iron skillet for 5 minutes.
- Transfer to a 400°F (200°C) oven, roast 18-22 minutes for medium-rare.
- Rest 10 minutes before slicing against the grain. Serve with chimichurri.
