Ingredients

  • 4 cups Broccoli florets
  • 1 cup Heavy cream
  • 2 cups Chicken broth
  • 2 cups (200g) Sharp cheddar, shredded
  • 3 tbsp Butter
  • 3 cloves Garlic, minced
  • 1 tsp Onion powder
  • to taste Salt and pepper

Method

  1. Melt butter in a large pot. Add garlic, cook 1 minute.
  2. Add broccoli and broth. Simmer 15 minutes until tender.
  3. Blend half the soup for a chunky texture (or all for smooth).
  4. Stir in cream and cheddar over low heat until melted.
  5. Season with onion powder, salt, and pepper.
