Ingredients

  • 6 cups Romaine lettuce, chopped
  • 1 cup (100g) Parmesan, grated
  • 1/4 cup Mayonnaise
  • 2 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 1 clove Garlic, minced
  • 1 tsp Anchovy paste
  • 2 tbsp Olive oil
  • to taste Black pepper

Method

  1. Make parmesan crisps: spread small mounds of parmesan on a baking sheet. Bake at 400°F for 5-7 minutes until golden.
  2. Whisk mayo, lemon juice, mustard, garlic, anchovy paste, and olive oil.
  3. Toss romaine with dressing.
  4. Top with parmesan crisps and extra grated parmesan.
