Ingredients
- 6 cups Romaine lettuce, chopped
- 1 cup (100g) Parmesan, grated
- 1/4 cup Mayonnaise
- 2 tbsp Lemon juice
- 1 tsp Dijon mustard
- 1 clove Garlic, minced
- 1 tsp Anchovy paste
- 2 tbsp Olive oil
- to taste Black pepper
Method
- Make parmesan crisps: spread small mounds of parmesan on a baking sheet. Bake at 400°F for 5-7 minutes until golden.
- Whisk mayo, lemon juice, mustard, garlic, anchovy paste, and olive oil.
- Toss romaine with dressing.
- Top with parmesan crisps and extra grated parmesan.
