Ingredients

  • 2 (6 oz / 170g each) Boneless chicken breast
  • 2 tsp Cajun seasoning
  • 1 tbsp Olive oil
  • 2 tbsp Butter
  • 3 cloves Garlic, minced
  • 3/4 cup Heavy cream
  • 1/2 cup (50g) Parmesan, grated
  • 2 medium Zucchini, spiralized
  • 1 tbsp Fresh parsley, chopped
  • to taste Salt and pepper

Method

  1. Pound chicken to even thickness; rub with Cajun seasoning.
  2. Heat olive oil in a skillet over medium-high. Sear chicken 5-6 minutes per side until 165°F internal. Rest, then slice.
  3. In the same skillet, melt butter and sauté garlic 30 seconds.
  4. Add cream; bring to a gentle simmer. Whisk in parmesan until smooth; season.
  5. Toss zucchini noodles in the sauce for 1-2 minutes (don't overcook).
  6. Plate noodles, top with sliced chicken and extra sauce. Garnish with parsley.
