Ingredients
- 2 (6 oz / 170g each) Boneless chicken breast
- 2 tsp Cajun seasoning
- 1 tbsp Olive oil
- 2 tbsp Butter
- 3 cloves Garlic, minced
- 3/4 cup Heavy cream
- 1/2 cup (50g) Parmesan, grated
- 2 medium Zucchini, spiralized
- 1 tbsp Fresh parsley, chopped
- to taste Salt and pepper
Method
- Pound chicken to even thickness; rub with Cajun seasoning.
- Heat olive oil in a skillet over medium-high. Sear chicken 5-6 minutes per side until 165°F internal. Rest, then slice.
- In the same skillet, melt butter and sauté garlic 30 seconds.
- Add cream; bring to a gentle simmer. Whisk in parmesan until smooth; season.
- Toss zucchini noodles in the sauce for 1-2 minutes (don't overcook).
- Plate noodles, top with sliced chicken and extra sauce. Garnish with parsley.
