Ingredients

  • 8 oz (225g) Ground beef (80/20)
  • 4 oz (115g) Chicken livers, finely chopped
  • 4 cups (400g) Cauliflower rice
  • 2 tbsp Butter
  • 1/4 cup Yellow onion, diced
  • 1/4 cup Green bell pepper, diced
  • 1/4 cup Celery, diced
  • 3 cloves Garlic, minced
  • 2 tsp Cajun seasoning
  • 1/4 cup Beef broth
  • 2 Green onion, sliced

Method

  1. Melt butter in a large skillet over medium-high. Brown the ground beef and chicken livers, breaking them up; about 6 minutes.
  2. Add onion, bell pepper, celery, and garlic; sauté 4 minutes until softened.
  3. Stir in cauliflower rice and Cajun seasoning; cook 5 minutes, stirring, until cauli is tender.
  4. Pour in broth and let it cook off, 2-3 minutes.
  5. Top with green onion and serve.
