  • 4 (6 oz each) Salmon fillets
  • 2 tbsp Cajun seasoning
  • 3 cups Cauliflower rice
  • 1 large Avocado
  • 2 tbsp Lime juice
  • 2 tbsp Olive oil
  • 2 tbsp Sour cream
  • to taste Salt

Method

  1. Coat salmon with cajun seasoning.
  2. Sear in olive oil 4-5 minutes per side.
  3. Sauté cauliflower rice until tender, 5 minutes.
  4. Blend avocado, lime juice, sour cream, and salt for the sauce.
  5. Serve salmon over cauliflower rice with avocado sauce.
