Ingredients

  • 1.5 lbs (680g) Large shrimp, shell-on
  • 8 oz (225g) Andouille sausage, sliced
  • 8 cups Water
  • 2 Lemons, halved
  • 1 head, halved Garlic, smashed
  • 3 Bay leaves
  • 3 tbsp Cajun seasoning
  • 1 tbsp Salt
  • 4 tbsp Butter, melted (to serve)
  • 2 tbsp Fresh parsley

Method

  1. Bring water, lemons, garlic, bay leaves, Cajun seasoning, and salt to a boil in a large pot. Simmer 5 minutes.
  2. Add andouille; cook 5 minutes.
  3. Add shrimp and cook 3-4 minutes until pink and opaque. Drain, discarding bay leaves.
  4. Pile shrimp and sausage on a tray. Drizzle with melted butter and parsley; serve with the boiled lemon halves to squeeze.
