Ingredients

  • 4 (6 oz each) Chicken breasts
  • 4 oz (115g) Fresh mozzarella, sliced
  • 1 large Tomato, sliced
  • 8 leaves Fresh basil
  • 2 tbsp Olive oil
  • 2 tbsp Balsamic vinegar
  • to taste Salt and pepper

Method

  1. Cut a pocket in each chicken breast.
  2. Stuff with mozzarella, tomato slice, and basil.
  3. Season outside with salt and pepper.
  4. Sear in olive oil 3 minutes per side, then bake at 375°F (190°C) for 15 minutes.
  5. Drizzle with balsamic vinegar.
