Ingredients
- 4 (6 oz each) Chicken breasts
- 4 oz (115g) Fresh mozzarella, sliced
- 1 large Tomato, sliced
- 8 leaves Fresh basil
- 2 tbsp Olive oil
- 2 tbsp Balsamic vinegar
- to taste Salt and pepper
Method
- Cut a pocket in each chicken breast.
- Stuff with mozzarella, tomato slice, and basil.
- Season outside with salt and pepper.
- Sear in olive oil 3 minutes per side, then bake at 375°F (190°C) for 15 minutes.
- Drizzle with balsamic vinegar.
